For Spring

SALMON WITH A POLENTA & HERB CRUST

- mix a teaspoon of chopped fresh herbs (dill, parsley, coriander all work well) with 2 T of fine polenta and some ground pepper

- coat the salmon fillets in the polenta mix

- fry in a little olive oil until golden - approx 4 minutes on each side

- serve with fresh greens and new potatoes


SEARED ASPARAGUS WITH LEMON AND SHAVED PARMESAN

- brush trimmed fresh asparagus spears with olive oil

- sear on a hot griddle for a couple of minutes - keep turning!

- remove to a waiting plate, squeeze over a little fresh lemon and shave on a bit of parmesan - voila!
